Avocado Egg Salad

Adding red onion, cilantro, and a tangy dressing to avocado egg salad makes it creamy and full of flavor. The avocados and hard-boiled eggs make the salad rich. Its great as a side dish or a quick meal.

Ingredients:

  • 2 ripe avocados, diced
  • 4 hard-boiled eggs, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

In a large bowl, combine the diced avocados and chopped hard-boiled eggs

Add the finely chopped red onion and fresh cilantro to the bowl

In a separate small bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice

Pour the dressing over the avocado and egg mixture

Toss gently to coat all ingredients

Season the salad with salt and pepper to taste

Serve chilled and enjoy
