These Soft-Baked Pudding Cake Batter Cookies are a delightful treat that combines the flavors of vanilla pudding and cake batter with the softness of a cookie. They are studded with white chocolate chips and colorful sprinkles, making them a fun and delicious snack for any occasion.

Ingredients:

  • 1 box 3
  • 4 oz instant vanilla pudding mix
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips
  • 1/2 cup rainbow sprinkles

Instructions:

Preheat your oven to 350F 175C and line baking sheets with parchment paper

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy

Beat in the eggs, one at a time, and then stir in the vanilla extract

In a separate bowl, whisk together the instant vanilla pudding mix, all-purpose flour, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Fold in the white chocolate chips and rainbow sprinkles

Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart

Bake in the preheated oven for 8-10 minutes or until the edges are golden brown

Remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely
