Heirloom Apple Salad

NSA Fun Danbury

The sweet and savory tastes in this Heirloom Apple Salad go well together. Heirloom apples give a classic salad a unique twist, and walnuts, feta cheese, and a honey balsamic dressing work so well together that the textures and tastes are perfect.

Ingredients:

  • 2-3 heirloom apples, thinly sliced
  • 1 cup arugula leaves
  • 1/2 cup toasted walnuts, chopped
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and pepper, to taste

Instructions:

Thinly slice the heirloom apples and put the arugula leaves in a large bowl

Put the extra-virgin olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl and mix them together with a whisk

Add the dressing to the apple and arugula mix and toss it around gently to coat

The salad should have the toasted walnuts and crumbled feta cheese on top of it

Serve right away and enjoy
