Moroccan Beef Stew

With its tender beef, sweet and savory flavors from dried fruits, and fragrant spices, this Moroccan Beef Stew is a hearty and flavorful dish.

Ingredients:

  • 5 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 1 can 14 oz diced tomatoes
  • 1 cup beef broth
  • 1/2 cup dried apricots, chopped
  • 1/4 cup raisins
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground coriander
  • 1/4 tsp ground cloves
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

In a large pot, heat olive oil over medium heat

Add onion and garlic, cook until softened

Add beef stew meat, cook until browned on all sides

Stir in carrots, diced tomatoes, beef broth, dried apricots, raisins, and spices

Bring to a simmer, then reduce heat to low and cover

Let the stew cook for about 1

5 to 2 hours, or until the beef is tender

Season with salt and pepper to taste

Garnish with fresh cilantro before serving
