As a bonus, there is a tangy apricot sweet chili sauce on top of these Healthy Korean Beef Bowls that adds even more flavor. They are served with brown rice and lots of healthy vegetables, making the meal well-balanced and filling.
Ingredients:
- 1 lb lean ground beef
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- 1 tablespoon grated ginger
- 1/4 teaspoon crushed red pepper flakes
- 1/4 cup apricot preserves
- 2 tablespoons sweet chili sauce
- 4 cups cooked brown rice
- 2 cups shredded carrots
- 2 cups shredded cabbage
- 1 cup sliced cucumber
- 1/4 cup chopped green onions
- 1 tablespoon sesame seeds, for garnish
Instructions:
In a small bowl, whisk together soy sauce, honey, garlic, sesame oil, ginger, and crushed red pepper flakes to make the marinade
In a large skillet over medium heat, brown the ground beef until cooked through, breaking it up with a spoon
Pour the marinade over the cooked beef and stir to combine
Let it simmer for 2-3 minutes until the sauce thickens slightly
In another small bowl, mix together apricot preserves and sweet chili sauce to make the topping
To assemble the bowls, divide cooked rice among four bowls
Top each bowl with beef mixture, shredded carrots, shredded cabbage, sliced cucumber, and chopped green onions
Drizzle apricot sweet chili sauce over the top of each bowl
Garnish with sesame seeds before serving
