These Paleo pancakes are fluffy, delicious, and made with wholesome ingredients. Perfect for a healthy breakfast or brunch

Ingredients:

  • 2 ripe bananas
  • 4 large eggs
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Coconut oil, for greasing skillet

Instructions:

Blend together the almond flour, baking powder, eggs, vanilla extract, and salt in a blender

Process until smooth

Grease a skillet with a small amount of coconut oil over medium heat

To make pancakes the size you want, pour pancake batter onto the skillet

Fry until surface bubbles appear, then turn and continue cooking until both sides are golden brown

Proceed with the leftover batter

Top with your preferred toppings and serve hot
