Ultimate Vegan Mac and Cheese

This vegan mac and cheese recipe is the ultimate comfort food. It doesnt have any dairy, nuts, or gluten. This dish is creamy and full of flavor, so even the pickiest cheese lovers will enjoy it.

Ingredients:

  • 300g gluten-free macaroni pasta
  • 1 cup peeled and diced potatoes
  • 1/2 cup diced carrots
  • 1/4 cup nutritional yeast
  • 1/4 cup olive oil
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon turmeric powder
  • Salt and pepper to taste

Instructions:

Follow the directions on the package to cook the macaroni pasta

Remove the water and set it aside

Boil carrots and potatoes in a pot until they are soft

Save some of the cooking water and drain

Add cooked potatoes, carrots, nutritional yeast, olive oil, almond milk, lemon juice, garlic powder, onion powder, turmeric powder, salt, and pepper to a blender

Blend until smooth

Blend until smooth, adding the cooking water you saved as needed to get the consistency you want

After the macaroni is cooked, add the sauce and mix it all together

Enjoy while hot
