Paleo Orange Cranberry Muffins

These Paleo Orange Cranberry Muffins are a tasty and healthy treat because they dont have any grains or gluten. They taste like sweet oranges and have sweet dried cranberries all over them.

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup honey or maple syrup
  • 3 eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dried cranberries

Instructions:

Preheat your oven to 350F 175C

In a large mixing bowl, combine almond flour, coconut flour, baking soda, and salt

In another bowl, whisk together honey or maple syrup, eggs, melted coconut oil, fresh orange juice, orange zest, and vanilla extract

Pour the wet ingredients into the dry ingredients and mix until well combined

Fold in the dried cranberries

Line a muffin tin with paper liners and divide the batter evenly among the cups

Bake for 20-25 minutes or until a toothpick inserted into a muffin comes out clean

Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack to cool completely
