Puffins Pancake Muffins

Pancakes with Puffins Making muffins instead of pancakes is a great idea. They are baked into muffins, and you can add blueberries, chocolate chips, or cinnamon to make them your own. Its great for a quick breakfast or snack

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips, cinnamon, or blueberries your choice

Instructions:

Warm up the oven to 350F 175C and grease or line a muffin tin with paper liners

Mix the flour, sugar, baking powder, baking soda, and salt together in a bowl

Take out a different bowl and mix the milk, egg, vanilla extract, melted butter, and buttermilk with a whisk

Add the wet ingredients to the dry ones and mix them together until they are just mixed

Watch out not to mix too much; its okay to have some lumps

If you want, you can add chocolate chips, cinnamon, or blueberries to the batter slowly

Fill up about two-thirds of the way to the top of each muffin cup with batter

The muffins should be baked in a hot oven for 15 to 18 minutes, or until they are golden brown and a toothpick stuck in the middle comes out clean

Take the muffins out of the oven and let them cool in the pan for a few minutes

Then, move them to a wire rack to cool completely

Put your favorite toppings on your Puffins Pancake Muffins or use maple syrup
