Breakfast Polenta Bowls with Fried Eggs

A hearty and tasty way to start the day is with these Breakfast Polenta Bowls with Fried Eggs. Creamy polenta is the base for a fried egg, sauted vegetables, and melted cheddar cheese. Diced tomatoes and parsley add a fresh touch to the top.

Ingredients:

  • 1 cup polenta
  • 4 cups water
  • Salt and pepper to taste
  • 4 large eggs
  • 2 tablespoons olive oil
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced onion
  • 1/4 cup diced tomatoes
  • Chopped fresh parsley for garnish

Instructions:

Bring 4 cups of water to a boil in a saucepan

Add 1 cup of polenta slowly while whisking and stirring all the time to avoid lumps

Turn down the heat, cover, and let the polenta simmer for 20 to 25 minutes, or until it gets thick and creamy

Stir every so often

Add salt and pepper to taste to the polenta

Put 2 tablespoons of olive oil in a skillet and heat it over medium-low heat while the polenta is cooking

Dice the onion, red bell pepper, and green bell pepper and add them

It will take about 5 minutes of sauting until they get soft

Put some olive oil in a different pan and heat it over medium-high heat

Put the eggs in the pan and fry them until theyre done the way you like

Spread the creamy polenta out in four bowls before putting the breakfast bowls together

Add diced tomatoes, a fried egg, sauted vegetables, and cheddar cheese to the top of each bowl

Add chopped fresh parsley as a garnish
