A smooth and cool dairy-free ice cream made from ripe avocados and rich coconut milk. This one-of-a-kind mix of flavors gives regular ice cream a deliciously tropical twist.
Ingredients:
- 2 ripe avocados, peeled and pitted
- 1 can 13
- 5 oz full-fat coconut milk
- 1/2 cup honey or maple syrup
- 1/4 cup lime juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions:
In a blender, combine avocados, coconut milk, honey or maple syrup, lime juice, vanilla extract, and salt
Blend until smooth and creamy
Pour the mixture into a shallow dish and cover with plastic wrap, pressing it directly onto the surface of the mixture to prevent ice crystals from forming
Chill the mixture in the refrigerator for at least 4 hours or until thoroughly chilled
Transfer the chilled mixture to an ice cream maker and churn according to the manufacturers instructions until it reaches a soft-serve consistency
Transfer the churned ice cream to a freezer-safe container and freeze for at least 2 hours or until firm
