Ingredients:
- 1 cup canned pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, melted
- 1/4 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- For the cream cheese filling:
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- For the streusel topping:
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 2 tablespoons unsalted butter, cold and cubed
- 1/2 teaspoon ground cinnamon
Instructions:
Start by heating the oven to 350F 175C
You can line a muffin tin with paper liners
Add the pumpkin puree, brown sugar, granulated sugar, melted butter, milk, egg, and vanilla extract to a large bowl
Use a whisk to mix the ingredients well
Salt, baking powder, baking soda, ground cinnamon, ground nutmeg, and flour should all be mixed together in a different bowl
Add the dry ingredients to the wet ones one at a time and mix just until everything is combined
Do not mix too much
The softened cream cheese, powdered sugar, and vanilla extract should be mixed together until smooth in a different bowl
This will make the cream cheese filling
Put about half of the pumpkin muffin batter into each muffin cup
In each muffin cup, put a small amount of the cream cheese filling
Cover the cream cheese filling with the rest of the pumpkin batter and place it on top of the muffins
Put the flour, sugar, cold cubed butter, and ground cinnamon in a small bowl
This is how you make the streusel topping
Get your hands or a fork and mix it until it turns into big crumbs
Cover all of the muffins with the streusel topping
After the oven is hot, bake the muffins for 20 to 25 minutes, or until a toothpick inserted into the middle comes out clean
First, let the muffins cool in the pan for a few minutes
Then, move them to a wire rack to cool completely
