This beef tortellini soup made in one pot is a hearty and warming meal that is great for cold days. This bowl has ground beef, cheese tortellini, and lots of vegetables. Its a full meal in a bowl
Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 carrot, peeled and sliced
- 1 celery stalk, sliced
- 4 cups beef broth
- 1 14
- 5 oz can diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1 9 oz package refrigerated cheese tortellini
- 2 cups baby spinach
- Grated Parmesan cheese for serving
Instructions:
In a large pot or Dutch oven, cook ground beef over medium-high heat until browned and crumbled
Drain excess fat if needed
Add diced onion, minced garlic, sliced carrot, and sliced celery to the pot
Cook for 5 minutes, or until vegetables begin to soften
Stir in beef broth, diced tomatoes, basil, oregano, thyme, salt, and pepper
Bring to a simmer
Add cheese tortellini to the pot and cook according to package instructions, usually about 7-9 minutes
Once tortellini is cooked, stir in baby spinach until wilted
Serve hot, garnished with grated Parmesan cheese
